Taco Tuesdays is always a family favorite, especially in our house. From regular tacos to taco salad, the kids already seem to love it. Sometimes though, you just want something different to mix things up a bit. Brian loves to get creative in the kitchen and decided to combine two favorites: Tater Tot Casserole and Tacos. This is another great recipe option that you can adapt to what works for your family or special occasion. When you take into consideration that the twins have had troubles with sensory in regards to food, I can happily tell you this got DEVOURED. No leftovers from this dish! Tex-Mex Taco Tater Tot Casserole
Combining two kid favorites for this easy and delicious Taco Tater Tot Casserole.
- 2 lbs ground beef
- 1 lb ground sausage
- 16 oz shredded cheese
- 10 oz nacho cheese
- 1/3 c seasoning
- 1 c salsa
- 1/3 c chopped sweet peppers
- 1/3 c chopped onion
- 3/4 c sour cream
- 3 c crumbled tortilla chips
- 1 package tater tots
- Cook tater tots by normal directions. You can begin working on the next steps while they cook.
- Preheat oven to 450 degrees.
- Brown ground beef and sausage. Drain any excess grease from meat.
- Combine seasoning, salsa, chopped sweet peppers, chopped onion, sour cream, and nacho cheese.
- Mix with browned ground beef and sausage.
- Spread meat and season mixture in baking pan/casserole dish.
- Top mixture with layer of cheese, then tater tots, then cheese.
- Bake for 10 minutes at 450 degrees.
- Top with crumbled chips and serve.

I didn’t realize how hungry I was. I’m saving this recipe and substituting the meat, since I’m a vegetarian. This looks so good though.
