To switch things up a bit, I wanted to make something new for breakfast. I have never made an actual breakfast casserole before by myself and while everyone was sleeping, I decided it was time to play a bit. With this quick and easy recipe, you can turn your favorite breakfast omelet into a casserole to feed the entire family.
Cheesy Bacon and Egg Scramble Casserole
Ingredients
- 6 Large Eggs
- 6 pieces of bread, ripped into pieces
- 4 Slices of Bacon, cooked and crumbled
- 2 Cups Milk
- Salt
- Pepper
- 1 Cup Shredded Cheese (we used cheddar)
The great thing about a recipe like this is again, the ability to adapt. You can easily create a casserole with anything you would use in cooking an omelet or scrambled eggs.
Directions
Pre-heat oven to 350 degrees F.
In a 13×9 pan, spread pieces of bread to cover bottom of pan.
Sprinkle cheese and bacon evenly across bread.
In a large bowl, combine eggs, milk, salt and pepper. This would be a good time to add any “extras” as well. Whisk until mixed evenly.
Pour egg mixture of bread slowly. Coat or saturate bread as you go.
Bake for approximately 35 minutes or casserole is fully set.

We make a breakfast casserole very similar to this, but typically use sausage instead of bacon. It’s delicious! Someday I’m going to have to try it with bacon – my husband’s favorite food.
