Piccolini® Mini Wheels Pasta Salad

INGREDIENTS

1 BOX Barilla Piccolini® Mini Wheels
4 TABLESPOONS Extra Virgin Olive Oil, Divided
2 CUPS Frozen Peas
1 POUND Boneless Skinless Chicken Breast, Diced
5 SLICES Bacon, Cut Into Strips
2 CUPS Cherry Tomatoes, Halved
1 CUP Fresh Mozzarella Cheese, Cubed (may Substitute Shredded Mozzarella Cheese)
1 Lemon
TO TASTE Salt

COOKING INSTRUCTIONS

    BRING a large pot of water to a boil.
    COOK Piccolini Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil. Spread pasta on a cookie sheet or baking tray to cool.
    JUICE lemon to yield 2 tablespoons lemon juice.
    BRING a medium pot of salted water to a boil.
    ADD green peas and boil for 5 minutes; drain and cool.
    HEAT a medium skillet over medium heat. Add remaining oil and chicken. Cook for 4-5 minutes or until cooked through; season with salt and pepper. Allow chicken to cool.
    COOK bacon in same skillet until crispy; drain fat and allow to cool.
    COMBINE all ingredients and allow to rest 30 minutes before serving.
