Barilla “Share The Table” Blog Tour

With families always on the go and full of activities on everyone’s schedule, too often do we forget the most important family time is meal time. That is why Barilla has created an important “Share The Table” program to help bring everyone to the table to share in their day. Barilla is a family favorite when it comes to making ziti and spaghetti and it’s really neat knowing there’s a Barilla factory close by in Ames.

Here’s just one of many Barilla recipes worth exploring-

Piccolini® Mini Wheels Pasta Salad

INGREDIENTS

1 BOX Barilla Piccolini® Mini Wheels
4 TABLESPOONS Extra Virgin Olive Oil, Divided
2 CUPS Frozen Peas
1 POUND Boneless Skinless Chicken Breast, Diced
5 SLICES Bacon, Cut Into Strips
2 CUPS Cherry Tomatoes, Halved
1 CUP Fresh Mozzarella Cheese, Cubed (may Substitute Shredded Mozzarella Cheese)
1 Lemon
TO TASTE Salt

COOKING INSTRUCTIONS

    BRING a large pot of water to a boil.
    COOK Piccolini Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil. Spread pasta on a cookie sheet or baking tray to cool.
    JUICE lemon to yield 2 tablespoons lemon juice.
    BRING a medium pot of salted water to a boil.
    ADD green peas and boil for 5 minutes; drain and cool.
    HEAT a medium skillet over medium heat. Add remaining oil and chicken. Cook for 4-5 minutes or until cooked through; season with salt and pepper. Allow chicken to cool.
    COOK bacon in same skillet until crispy; drain fat and allow to cool.
    COMBINE all ingredients and allow to rest 30 minutes before serving.
